Kebab turned fifty.Time for a new wave.

We grew up eating kebab at 2 AM. We defend it. But shawarma — real Levantine shawarma — deserves a different conversation. Different meat, different bread, different spices, different respect.

De Pita Madre is not gourmet kebab. It is the honest question of what happens if you treat shawarma with the same seriousness a steakhouse treats prime rib. The answer lives in every pita that leaves our oven.

How we do it

Three obsessions. Zero shortcuts.

The meat

Single-source chicken and beef, marinated 24-48 h in a 14-spice blend. Slow vertical cooking. Knife-cut, into the pita, in front of you.

The pita

Our own sourdough. Selected flours. Baked every morning in-house. Warm, fluffy inside, lightly toasted outside. No industrial shortcuts.

What goes inside

Market produce, in-house hummus, pure tahini, our own sauces. House pickles. Every topping with a reason. Zero anonymous bottled sauces.

A short menu is a confident menu. If it is on, we do it well. If we are not sure, it is not on.

What's the difference between kebab and shawarma?

Kebab is Turkish, usually lamb or beef with Turkish spices on flatbread. Shawarma is Levantine (Lebanon, Syria, Israel) — different spices, on pita, with fresh toppings. We do shawarma. You'll notice on the first bite.

Is the meat halal? Is it kosher?

We work with certified suppliers depending on the product line. Ask at the counter — we'll tell you straight what we have today.

Are there vegetarian and vegan options?

Yes: falafel pita (vegan), smoked eggplant pita (veggie) and starters like hummus, baba ghanoush and tabbouleh. Let us know about allergies.

Do you take reservations?

Casual format, no reservation needed. For groups of 6+, DM us on Instagram.

What does a meal cost?

A pita + drink runs €12-15. Sharing starters, around €18-22 per person. Premium product, fair price.
